A washed counterpoint to Sidama's famous naturals, this lot from the Dale sub-district showcases the zone's softer side. Careful fermentation and channel washing strip away fruit pulp to reveal a delicate, floral character with lemon brightness, mild chocolate undertones, and a lingering honey sweetness. Produced by the same SCFCU cooperative that delivers our Bensa natural, this Dale lot is processed at a dedicated washing station equipped with spring-fed fermentation tanks and solar-assisted drying infrastructure. The result is a clean, approachable cup that serves as an excellent introduction to Ethiopian specialty coffee.

The Dale Washing Station, operated by the Sidama Coffee Farmers Cooperative Union, sits at the edge of the Dale district where elevation and abundant spring water create ideal conditions for fully washed processing. Cherries are selectively hand-picked at peak ripeness, depulped within 8 hours, and double-fermented in tiled tanks for 36-48 hours before channel washing. The station processes coffee from over 200 smallholder farms across the Dale highlands, each delivering cherries daily during harvest. SCFCU's investment in water recycling and raised African drying beds at Dale has produced consistently clean, floral cups that exemplify the brightness of high-altitude Sidama washed coffees.
